Method:Baking

1. Formula

  1. 1 cup cornmeal
  2. 1/2 cup shredded Cheddar cheese
  3. 2 teaspoons baking powder
  4. 3/4 teaspoon salt
  5. 2 eggs, beaten
  6. 1 (8 ounce) can cream-style corn
  7. 1 cup buttermilk
  8. 1/4 cup vegetable oil
  9. 1 tablespoon minced jalapeno pepper*

3. Directions

  1. In a bowl, combine cornmeal, cheese, baking powder and salt. Combine the remaining ingredients; stir into cornmeal mixture just until moistened. Transfer to a greased 9-in. square baking pan. Bake at 350 degrees F for 1 hour or until toothpick inserted near the center comes out clean.
