Method:Boiling

1. Formula

  1. 2 cups heavy cream
  2. 3 cloves garlic, minced
  3. 2 sprigs fresh rosemary
  4. 1 tablespoon sweet paprika
  5. 2 tablespoons peanut oil
  6. 3/4 cup brunoise of red onion
  7. 1/2 cup brunoise of red bell pepper
  8. 1/2 cup brunoise of yellow bell pepper

  • Fat: 20 g
  • Protein: 1 g

3. Directions

  1. In a saucepan, combine the heavy cream, garlic, rosemary and paprika. Reduce by half. Allow to cool to room temperature. In a saute pan, heat the peanut oil. Sweat the onions, red and yellow bell pepper until glossy. Transfer to a plate and allow to cool to room temperature.
