1. Formula
- 1 cup Cognac or brandy
- 1 (7 inch) vanilla bean, split lengthwise
- 1/2 cup creme de cassis (black-currant-flavored liqueur)
- 3 (750 milliliter) bottles brut Champagne

3. Directions
- At least one day before serving, place Cognac and vanilla bean into an airtight container.
- To serve, pour 1 teaspoon vanilla Cognac and 2 teaspoons creme de cassis into each of 12 Champagne glasses. Fill glasses with Champagne and serve.
4. Remark
Vanilla-accented Cognac adds a twist to the traditional Kir Royale (an aperitif made with Champagne and creme de cassis). Prepare the Cognac-vanilla mixture at least one day ahead so that the flavors can mingle. Have extra bottles of Champagne on hand for a second go-round.
