Method:Baking

1. Formula

  1. 6 boneless, skinless chicken breast halves
  2. 2 tablespoons lemon juice, divided
  3. 1/4 teaspoon salt
  4. 1/4 teaspoon black pepper
  5. 1 (4 ounce) package ATHENOS Crumbled Feta Cheese with Basil & Tomato
  6. 1/4 cup finely chopped red pepper
  7. 1/4 cup finely chopped fresh parsley

  • Calories: 134 kcal
  • Carbohydrates: 1 g
  • Dietary Fiber: 0 g
  • Fat: 2 g
  • Protein: 24 g
  • Sugars: 0 g

3. Directions

  1. Preheat oven to 350 degrees F. Arrange chicken in 13x9-inch baking dish.
  2. Drizzle with 1 Tbsp. of the lemon juice. Season with salt and black pepper. Top with feta cheese; drizzle with remaining 1 Tbsp. lemon juice.
  3. Bake 35 to 40 min. or until chicken is cooked through. Sprinkle with red pepper and parsley.

Notes:

Great Substitute
Prepare as directed, using 6 skinless chicken thighs. Bake 40 to 45 min. or until cooked through.
Variation
Omit red pepper and parsley. Substitute 1/2 tsp. chopped fresh oregano for the salt and 1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese for the Feta Cheese with Basil & Tomato.
